TITLE:

"Off-flavour producing bacteria in aquaculture"

ABSTRACT:

Off-flavours are of great concern in various system such as drinking water, food production and aquaculture. Geosmin, with its extremely low detection threshold for humans, seems to be the most widespread off-flavour compound in aquaculture. It is a secondary metabolite, which enters through the gills into the fish and accumulates in the adipose tissue. Tainted fish needs to be depurated in clean water for several days and even weeks to ensure geosmin is no longer traceable. This increases the workload and production cost for the aquaculture owner. Known geosmin producers are Actinomycetales, especially Streptomyces, myxobacteria and Cyanobacteria.

The objective of this thesis was to reveal the diversity and identity of geosmin-producing bacteria in aquaculture and to provide strategies for elimination of geosmin. Several molecular biological methods were utilized in order to provide knowledge on the identity, prevalence and activity of geosmin-producing bacteria.

In conclusion, it was possible to link dominant geosmin producers in aquaculture with environmental water quality parameters controlling their presence and their activity. The fish gut microbiome was found to harbour a high number of geosmin-producing bacteria and therefore likely represents a new uptake route in aquaculture fish.
